It was 1971 when Angela and Carisio, known as Caino, opened a wine shop where they could keep cold meats, cheeses and some cold preparations.
Since then, much has been done and is today among the best in Italy, renowned at home as well as abroad.
The seasons with their colors, scents and flavors, their shapes, are the protagonists of Valeria Piccini's cuisine, an immediate cuisine with strong tastes typical of Maremma. From this magical land and from this food and wine experience you can be tempted and that's why the same oil served at the tables coming from the family production can be purchased at the wine shop along with other specialties.
A few kilometers from the thermal baths of Saturnia, Montemerano was a happy oasis in the communal period.
It is difficult to imagine Caino in a place other than Montemerano, a splendid medieval village, on top of a hill in the municipality of Manciano.
The furnishing is elegant and extremely accurate in detail. The fireplace, the linen curtains and soft lighting create a comfortable environment. A few tables, only nine, where just over 20 people can be seated, set with precious tablecloths, strictly white dishes, crystal glasses and silver cutlery.
It is in this frame that Valeria expresses herself through its unmistakable recipes. Starting from tradition, it overcomes it without ever forgetting it. Her dishes are succulent, with clear and precise flavors, played on contrasts of aromas, textures and temperatures. The result must be a real joy for all the senses, where taste is fundamental and only later comes the aesthetic aspect, which is always taken care of.
However Valeria does not jealously preserve her secrets in the kitchen, but dispenses advice; she is demanding with her staff, but also maternal and understanding. The menu usually changes once a month, depending on the season.
Maurizio, after years of experience, today entrusts the wine choices to his demanding and attentive palate.
The cellar is truly spectacular, descending several meters below the ancient town square, creating underground caves, rooms and corners, in which approximately 20,000 bottles rest.
In his Wine List it is always possible to find some absolute rarities and special labels, the result of loving care but far from notoriety. In addition to those of own production, the best of Italian and foreign production is not missing.
